The Favourites!


This post is dedicated to the favourites! Let's just say, Mr. Reese definitely had it right when he mixed chocolate and peanut butter together creating one of life's best pairings! 

From top to bottom - Chocolate with a rich chocolate cream cheese frosting - because you can never go wrong with chocolate, chocolate peanut butter chip with a peanut butter cream cheese frosting (topped with a mini reese peanut butter cup!) and a caramel cupcake with a caramel butter cream (with a hint of salt!) Who knew that salt would make a cupcake so delicious!

How to make cupcake liners stick



I have been busy making lots of cupcakes for the holiday season. It is always a good feeling when you pull out a batch of cupcakes from the oven and they look perfect.  On the other hand, when you pull a batch from the oven that look less than stellar, I am often left wondering, what went wrong?!

The last mishap I have encountered was cupcake liners not sticking to the cupcake.  This was quite disappointing especially when they were cute (and more expensive!) Christmas liners.  I did some research into why this might happen and realized that letting the cupcakes cool too long in the pan was the culprit (in my case.)  As the cupcakes cooled in the pan, they slowly peeled away from the liner.  This could be fixed easily if it was just a small peel (yay for sugar water!) but not when the whole liner peeled off. 

My advice, as soon as you can manage to get the cupcake out of the pan (careful not to burn your fingers!) get them out and onto a cooling rack. Let cool completely, frost and enjoy!

I love Christmas.  I love seeing family and friends.  I love giving gifts.  I love all of the food! Especially the foods that really are only around during the holidays! Ever since my friend introduced me to PC Candy Cane Ice Cream when I was in grade 7, I have adored all things candy cane and peppermint flavoured! So when thinking about what type of cupcake I wanted to make next, it was the obvious choice.  This cupcake is  white chocolate peppermint with a subtle white chocolate peppermint buttercream icing.  So good!

Chocolate and Red Velvet cupcakes are the perfect pairing for the chocolate lover.  A Red Velvet cupcake is perfect for those who want a cupcake with just a hint of cocoa, topped with a smooth cream cheese frosting.  A true chocolate craving calls for the Double Chocolate cupcake, rich chocolate cake frosted with chocolate cream cheese.

What does every new parent (or any over-tired individual) crave more than sugar to give them a boost? Coffee! That was the inspiration behind these coffee infused cupcakes, sprinkled with espresso powder.  Officially this would be called a mocha cupcake, as the base I used was a chocolate cake.  In my opinion, not much better than coffee and chocolate!

 
The only thing better than one mini cupcake, is three mini cupcakes!

I love cookies.  Almost as much as I love cupcakes.  Put the two together and you get the delightful cookies n' cream cupcake.  I experimented with this cupcake about a month ago, much to my husbands delight, it was a success!  The icing was also a new one for me to try.  I did a thin layer of chocolate ganache icing and then dipped them in cookie crumbs.  So good!

For everyone who knows me, they know I love desserts, especially cupcakes.  Since I love baking I decided I would start experimenting with making my own cupcakes.  My family and friends have not seemed to mind being my taste testers on new flavours! I started this blog to express what I have been up to and showcase some of my creations.
 
 

These cupcakes were made for a friend's baby shower.  They are Key Lime, Salted Caramel and Chocolate Banana.  They went over quite well with the guests and Mom-to-be!

Anyways, will keep the first post short and sweet, but wanted to get started posting! I hope you enjoy!
